Healthy Vegan Apple Broccoli Salad

There is a cafe down the road of our house that makes a “Healthy Vegan Apple Broccoli Salad”, but I question how healthy it is, likely it has standard mayonnaise made up mostly of oil. Kind of undoes your healthy choice doesn’t it? Want a cup full of oil with that? Sounds like something out of a Macca’s drive through window… and at around $20 for a serving… Well… here we are!

The most awesome thing about this super easy and simple salad is the Oil Free Mayonnaise – which as you may have read on my previous blog, I can not take credit for… It’s one of Lisa & Kev’s recipes of Plant Power Mojo – head on over to their Facebook page and follow them to receive awesome plant based inspiration!

Originally I was serving this salad as a side, but was finding it was really filling! I’d end up full while waiting for the rest of our lunch to cook, so it’s now a favourite just as a main. So yummy!

Healthy Vegan Apple Broccoli Salad

Here’s what you need, 4-5 Apples, I leave skins on if organic or vinegar wash if non organic. Broccoli, walnuts & sultanas…. as well as….

Oil Free Vegan Mayonnaise

Oil Free Vegan Mayonnaise, which you can find the recipe here (it requires soaking of cashews overnight).

The broccoli didn’t need chopping up as I cut it like this on shopping days during meal prep, so I just had to cut the apples, and roughly chop the walnuts…

Apple Broccoli Walnut Healthy Vegan Salad Salad
Healthy Vegan Apple & Broccoli Salad (with Oil Free Mayonnaise)

  • 5 apples - red
  • 1/2 broccoli or one whole small one
  • 1 cup walnuts
  • 1/2 cup sultanas
  • 1/2 cup oil free vegan mayonnaise (see link above for recipe)
  1. Chop the broccoli into florets and place in mixing bowl 

  2. Roughly cut the walnuts, add to mixing bowl

  3. Dice the apples and also add to mixing bowl, along with the sultanas

  4. Add in 1/2 cup (more or less depending) of oil free mayonnaise.
