There is a cafe down the road of our house that makes a “Healthy Vegan Apple Broccoli Salad”, but I question how healthy it is, likely it has standard mayonnaise made up mostly of oil. Kind of undoes your healthy choice doesn’t it? Want a cup full of oil with that? Sounds like something out of a Macca’s drive through window… and at around $20 for a serving… Well… here we are!

Originally I was serving this salad as a side, but was finding it was really filling! I’d end up full while waiting for the rest of our lunch to cook, so it’s now a favourite just as a main. So yummy!
Here’s what you need, 4-5 Apples, I leave skins on if organic or vinegar wash if non organic. Broccoli, walnuts & sultanas…. as well as….
The broccoli didn’t need chopping up as I cut it like this on shopping days during meal prep, so I just had to cut the apples, and roughly chop the walnuts…
Mix it all about….
And add the Oil Free Mayonnaise… Too easy!

Chop the broccoli into florets and place in mixing bowl
Roughly cut the walnuts, add to mixing bowl
Dice the apples and also add to mixing bowl, along with the sultanas
Add in 1/2 cup (more or less depending) of oil free mayonnaise.
