It all started with trying to reduce the amount of bread we consume – and how we could replace with more nutrient dense foods. Trouble was, we love soups. We love thermomix soups and who doesn’t? So easy to make, set to cook and get a couple jobs done or the kids bathed while the thermomix does it’s thing?
One soup that we love from the Basic cook book is the Tomato Lentil Soup… So we thought we’d have a go at making the soup thicker with more lentils and putting it on a bed of rice. Better! Yep!…. But then… Cauliflower Rice….
Man loves it. The kid hasn’t noticed the difference. Win, win, win.
Next thing on my list is cauliflower rice risotto… or Saffron cauliflower rice… Do you think it would work? 🙂
Cut cauliflower into florets and put into thermomix
5 seconds, REVERSE, speed 5
Remove cauliflower and tip into steaming basket. Add 500 grams of water and cook Varoma, 10-14 mins, speed 4.
