It’s summer now so I’m looking for cooler food to eat not to mention being post baby I’m keen to shed some kilos so I want healthy but filling salads like this that I can eat as a main….
Of course I was a little gob smacked when I realised that even vegan mayonnaise is full of oil. So I messaged a friend, Lisa from Plant Power Mojo and asked her if she had an oil free may recipe… and she directed me to a link on her Facebook page… Yay! So I’m happy to be creating new salads that work with mayonnaise and this is I’m sure to become a favourite Potato salad in our house, probably due to my mans love of Tamari Almonds!
Boil a pot of water on the stove.
Meanwhile peel potatoes and chop. Once chopped put them in the pot of water and boil until cooked. (check with fork)
While this is cooking, chop the spring onions, parsley and almonds (and set aside)
Drain the artichoke heads, rinse and pull apart, set aside.
Once the potato is cooked, drain allow to cool in a bowl.
Then add spring onions, parsley, mustard seeds, artichoke heads, almonds and mayonnaise and stir.
I make oil free mayonnaise that is also vegan using this recipe mayooi.
