Oil Free Vegan Mayonnaise by Plant Power Mojo

You read right, Oil Free Mayonnaise, and Vegan! Yay!

I’m so grateful to Lisa for letting me post this amazing Oil Free Vegan Mayonnaise on my blog – I really wanted to include it as I’d be using it with my Broccoli & Apple and Potato Salad – which I will be posting the recipe to very soon!

It’s super easy to make, just a little prep the night before …. pop 1 1/2 cups of cashews in water to soak overnight in the fridge.

The rest is so easy….

This is all you need: Cashews, lemon, dijon mustard, apple cider vinegar, maple syrup, water, garlic cloves, salt & smoked paprika!

This recipe makes a jar this size with a little left over.

Makes 1 and a bit jars. 

Course: Dressing
Cuisine: Gluten Free, Vegan,
  • 1/2 Lemon including zest
  • 1.5 cups Cashews (soaked overnight)
  • 4 tbsp Dijon Mustard
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Maple Syrup (or similar)
  • 1 cup Water
  • 3-5 cloves Garlic
  • pinch Himalayan Crystal Salt
  • pinch Smoked Paprika
  1. Whizz it all up in food processor/ blender / thermomix until smooth. 

Recipe Notes

I find it needs a brisk stir the next day to keep it nice and smooth.

    I would say it depends on the quality of your blender and how long you soak the cashews for 🙂

    Will you be able to create this with just a blender? Not sure but if yes, please let me know! Resources are kind of scarce around my area.
