You read right, Oil Free Mayonnaise, and Vegan! Yay!

I’m so grateful to Lisa for letting me post this amazing Oil Free Vegan Mayonnaise on my blog – I really wanted to include it as I’d be using it with my Broccoli & Apple and Potato Salad – which I will be posting the recipe to very soon!
It’s super easy to make, just a little prep the night before …. pop 1 1/2 cups of cashews in water to soak overnight in the fridge.
The rest is so easy….
This is all you need: Cashews, lemon, dijon mustard, apple cider vinegar, maple syrup, water, garlic cloves, salt & smoked paprika!
Pop everything into the food processor, blender or thermomix… And blend until creamy smooth! And here we go. Amazing oil free, healthy mayonnaise for your healthy salads!
This recipe makes a jar this size with a little left over.

Makes 1 and a bit jars.
Whizz it all up in food processor/ blender / thermomix until smooth.
I find it needs a brisk stir the next day to keep it nice and smooth.
